  • Red or green curry paste
  • Lime juice

Instructions:
  1. Add spoonful of red or green paste to medium saucepan and stir until you can smell the aroma.
  2. Pour in can of coconut milk and stir until paste is creamy.
  3. Add broth of choice. 
  4. Add chicken pieces and let it cook in simmer for about 5-7 minutes.
  5. Once the chicken is cooked season soup with additional ingredients to taste. 
 
 Adding additional ingredients like fish sauce, brown sugar, chilies, and lemongrass will enhance the flavor and add texture. Let the soup simmer for a few more minutes once everything is added to allows flavors to blend.
Chili:

  • Sliced mushrooms
  • Diced onions

  • Heavy cream
  • Fresh thyme
  • Flour
  • Salt and pepper 
 
Instruction:
 
  1. Melt butter in medium saucepan. Add diced onions and minced garlic and sauté for 3-5 minutes. 
  2. Add sliced mushrooms and cook for about 5-7 until they start to brown.
  3. Sprinkle flour over mushrooms and stir well to coat. Cook until no longer taste the flour.
  4. Pour desired broth slowly to prevent lumps from forming. Stir occasionally as pouring.
  5. Cook for 10-15 minutes to allow soup to thicken and flavors to mix together.
  6. Use regular blender to puree the soup until smooth. Be cautious when blending hot liquids.
  7. Return soup back to pot and pour in heavy whipping cream. Season with salt and pepper to taste.
  8. Let the bisque simmer for a few more minutes and garnish with fresh thyme if desired.
